chef maklong

a good friend of mine, puan pB requested the sikret recipe of the maklong nyer tomyam. when i asked he for the recipe; she gelak and said she dont have any specific recipe. all is just campak secukup rasa.

however, i still manage to korek the resipi from her and write down what she cakap. but… honestly; chef wan pun takleh masak klu baca that notes rcp well actually it goes like this

bawang putih mesti lebih dari bawang merah. …

8 biji putih and 6 merah

bawang besar – slices – jangan banyak sangat..nanti jadi tomyam bawang lak!!

2 sudu cili boh – this one to add color for the tomyam

halia – about 4 inches – kena ketuk

3 to 4 serai tindik

daun limau purut – kena buang tulang daun tu – elak rasa pahit. berapa banyak ? a few… ikut size daun kata dia !

perahan limau kasturi tomato – 4 biji – this one kena kelar kulit. then celor in boiling water for a while. pastu buang kulit and then lenyek/tumbuk. jadi kan paste – this one will pekatkan the kuah

lots of haiwan  – sotong,udang,ayam,gajah slice of ikan and so on. normally she add those rangka ayam – kasi ‘manis’ itu kuah

sayuran – those bunga kubis,brocolli, dan seangkatan dengannya.

minyak

garam,gula secukup rasa

No MSG

method:

tumis cili boh dlm kuali sampai kuar minyak and put aside first.

in the periuk panaskan minyak

lepas panaskan minyak, tumis the bawang merah and bawang putih. then masukkan air pastu the asam limau, the halia,serai,the tomato

half boiled masukkan the daun limau purut and then goes the haiwan

masukkan bawang besar

dah didih, kena rasa – masam masin n manis… adjust secukup rasa.

then masukkan the sayur then the cili boh yg di tumis tadi – this will add the reddish color and the oily effect. lagi mengghairahkan kata dia.

kacau and biar sampai masak.

      pb- base dia maybe sama; cuma mungkin sifu lain2. trial and error..biasa laa🙂
      the son – well dia tak dpt offer to the sek. tahfiz sains tu. now he is in one of the sekolah rancangan khas. daily school as her mom insist nak tengok anak jantan dia ni hari hari…. tannak lepas gi asrama

  2. wah!! menariks jugak. Dah lama neeza nak try tomyam merah tapi bukan guna paste yang beli yang dah tentu ada MSG tu.. not good for health kan..🙂
